FRUIT CHICKEN CURRY

*Mr. Paul Waller, an English teacher,
taught us "Fruit Chicken Curry".

 

*ingredients

*This will serve 4 or 5 people.

・ 1 medium onion, chopped
・ 2 boneless, skinless chicken breasts, cut into 2-inch chunks
・ 2 tablespoons of sunflower oil
・ 1-2 tablespoons curry powder
・ 1 clove garlic, crushed
・ 1 cup canned coconut milk (unsweetened)
・ 1/2 peeled, chopped apple
・ 1/2 can of pineapple pieces
・ 1 can of chopped tomatoes
・ 1 banana
・ lemon juice
・ 2 tablespoons of natural yogurt
・ 1 or two stock cubes and corn starch to thicken
・ Nan bread

Heat the vegetable oil in a large saucepan over medium heat.
Add the chopped onion.
Cook for 5-8 minutes, stirring regularly until onion becomes tender and golden brown.
Remove the onion to a bowl, increase the heat and brown the chicken.
Discard any remaining oil.
Add the curry powder, garlic and cook, stirring, for 2-3 minutes.
Add the onion.
Stir in the coconut milk, chopped apple and pineapple.
Cover, and simmer for 25 minutes.
Remove from the heat and stir in the yogurt.
Garnish with slices of banana. 
Serve with Nan bread.

 

*You can use peaches instead of pineapple and you can 
add fresh tomatoes cut into  quarters.
If the curry is too spicy, add more yogurt.
Beef or pork needs more cooking time.
Buy the cheapest chicken you can.

 

 *Easy dish  cooked by one saucepan.

   Good with bananas !
